Last Wednesday I went to our butcher.
I wanted 1 kg beef shin, bone in, sinew removed, for Saturday.
I even showed her what I wanted:
I was the only customer at the time and could hear she ordered correctly over the phone to the main store.
So, Saturday we went, and lucky thing Ingo was with me, because, when I said that I ordered they made a very serious face and said, "something went wrong...".
- The bone was in - check.
- The sinew not removed - not good.
- It was not 1 kg, but... 3! They were not able to cut it down, "the men made a mistake".
Ingo decided to take it as they gave it away for a (at that time seemingly) very low price (€18).
2 km later I handled the meat over to Ingo and he was kinda surprised how heavy it is after all ;-)
Ingo took sliced onions, fresh chillies, fresh coriander, cumin, smoked paprika, cinnamon, fresh bay leaves, 800 g tinned tomatoes... the smell was heavenly!
And with the meat that was nearly 4 kg!
Wack that in the oven - not an easy task!
(Yes, that´s the IKEA mammoth kid´s chair I use in the mornings beside the door to get my sneakers on :-)...)
Exciting, right?
After about two hours Ingo turned the huge thing around and you can see the massive bone:
The smell was awesome, the first taste, too!
Still more than two and a half hours to go!
Five hours all in all, 20 minutes before it´s done Ingo added the beans and you could see that the meat yummily fell apart!
We´re speaking of nearly 5 kg now!
And since we have a clean microwave at work there will be loads of yummy and healthy meals for me (you can add "or so I thought").
Finally!
After Ingo got rid of most of the fatty/sinewy stuff...
It does, don´t you agree?
But when even Ingo refuses to eat the slimey stuff...
Never take the shin (or we got a real bad one), it all ended up in the bin - from the book "Save with Jamie"... not all attemps on saving are a success. Next time we take another piece of a cow for sure!
Ingo said, let´s make up for this with an exclusive local beer...

Right. The "best before"-date certainly was long gone!
(The taste was still good)
Some days... at least there was a lot of fun, heavenly smell and excitement.

Wow, that was a lot of meat! You will be eating that for weeks I think...
I can imagine the nice smell though and the meat falling of the bone, yummi!
No, Sami, we really had to throw it in the rubbish-bin - it was that awful...

Oh my gosh Iris, all that effort and it ends up in the bin!!!! It really must have been so bad. Do you think Ingo cooked it for too maybe? Still, the fish fingers and mash are always a good back-up 😀😀
Blogoratti, well, it´s not my mother-tongue language, so.. .maybe sometimes I´m a tad too complicated...
Grace, no, Ingo did a good job. At the butcher today they admitted no one ever ordered that part of the cow, so it must be .. well, dog-food! Lesson learned!
Oh, and yips, Grace, fishfingers nearly always do the job :-)
