(We have two Eskies at home from our travels throughout Australia, we still cannot buy proper ones here)
.. I needed to "park" our frozen food cause ...
... because I was so naive to think I´ll have a job by now.
Bought 1000 ingredients to make brekkie/lunch for work... nada (hear me cry?).
Then saw, YIKES freezer is frozen.
I have to bake all the stuff and where put it?!
Yes, I also eat at home.
But I was planning for weeks, stupid me.
So I had to... On one day.. defrost that ole thing and meanwhile....
Most frozen now. Yep, I ate one Pizza-muffin right away, yummmm....
And yes, thank you for the tip: I mixed in that darn hemp flour with others, that´s why this bread looks "green". Not tasted yet. But reckon it´ll be good.
It´s the BEST BREAD EVER. Bro wanted the recipe, can´t wait if he tries how he thinks it´s like. Big Niece has diabetes 1 and it would be great for her.
How.
My Brother called me and when I told him what I did he said, "YOU?! I NEVER thought you´d dare the oven ever!!"
Really, it´s SO easy!!!
SO.DARN.EASY.!!!
First semester at uni and that stupid girl showed me her wounds from touching the hot oven and off I was.
Loose your job and grow.
Today: Making Jalapeno Cheddar cookies to use up all the butter I bought.
Oh. And vacuuming, mopping....
Please. I want a "real" job!!!
Oh, and, sorry, here goes:
DANCE along! 💃🕺
Henry 🦁?
Oh, in case someone else wants the recipe, I translated it for a fellow blogger anyways, so here goes:
Onion cake:
The onion cake is easy, you need:
- ca 350 g onions (of course, LOL)
- 200 g almond flour (or any other, I guess)
- 3 eggs
- 1 TS psyllium (don´t think it´s essential)
- 100 g (shredded) ham/Prosciutto (whatever you like)
- 150 g curd cheese (20%)
- 150g Crème fraîche
- 100 g (shredded) cheese (cheddar or such)
- Salt/Pepper/oil/butter.
Here is a video on how to make it.
First the dough (well, ACTUALLY... because I´m slow I cut all the other stuff first and frying the onions took more than 10 minutes, too, and you don´t want to waste energy on the oven, right?):
Mix the almond flour (I took less, some 150g) with 2 of the eggs (in the video they show one, you will need two), the psyllium and salt, mix well, then fill it in a buttered form and bake for 10 minutes at 180C.

And to be really honest: Next time I´ll just bake it without dough!!! Not worth it for me.
Cut the onions (half and then just slices), cook in a pan with oil till golden. I also added white wine. Because I had it... add salt and pepper, of course, just choose when.
Add the cut meat.
Then... well I mixed it first, the curd cheese and Crème fraîche, add.
Next 80 g or such of the shredded cheese.
Mix all that and put it in the form.
Top it with the rest of the shredded cheese and bake for another 20 minutes at 180C.
Let it cool down a bit (essential for the taste of the onions).
Enjoy :-)
I think most people have a white wine with it (I just need that for cooking and have a beer).

P.S. "Funny" coincidence... Facebook reminded me... two years ago TODAY we were off to Frankfurt and then on the way to Perth. I could cry for real now, darn Corinna, you!!!

Ha, you did your best and made the best of it.
:-) Yes.
Onion cake sounds good.
Even tastes good, too ;-)
Yum! Now you get to enjoy the best part--results of all that baking :-)
Yes. Trying to see the positive part...
thanks for the recipe-so glad you are baking-it's fun isn't it? hugs
I'm proud of you for overcoming your fear of the oven Iris, I bet Ingo is absolutely thrilled and enjoying all your delicious cooking. Can you believe I will be heading over to Aimee's house over the weekend to help her defrost her fridge 😊 Happy weekend to you both 💛
...that's a mighty small refrigerator!
Kathy, yes, it IS fun indeed! Hugs :-)

Grace, what are the chances, have fun defrosting, hope you have an Esky at hand! 😂
No - Ingo does not like or is not allowed health-wise to help me eat that up.
A happy weekend, hope you have some yummy stuff to munch down in the de....-frosting wait.

Tom, small? That´s a normal German one. It´s a two in one, fridge on top, freezer underneath. We call the combo fridge. My bad, I should´ve explained better...
You will be a master baker soon. Looks great. Ohhh defrosting yuck.
Thank you 😀
Aw, well, I didn´t do much, it defrosted itself, friendly thing that!
That sounds great. Would love to try a piece of it. Yummy.
Easy to make :-)
I'm so impressed with all of your baking!
It´s fun! And yummy :-)
You should have your own cooking show with all the cooking and baking you are doing. Cooking with Chef Iris! :)
Have a nice evening!
:-) Bill! Took me only nearly 50 years! A nice evening to you, also!
I'm so very glad you've started baking and this looks delicious! Thank you so much for sharing the recipe!
Your food looks delicious! Sorry to hear about your job situation. That can be so frustrating. Hang in there!
Just can't imagine onion and cake!
I am running SO far behind, I may never catch up. I had NO idea a freezer had to be defrosted anymore. I thought they were all frost proof. So glad you had a way to keep the food frozen while you cleaned your freezer.
You sure did a LOT of baking. One nice thing, I now you will eat it, and it won't go to waste. Love Henry today. Again, sorry I'm late visiting, dear.
Jeanie, you´re welcome, it´s really yummy.

Spare Parts and Pics, yes, in lockdown not a chance, I was told. At least I´m not bored at all and don´t rely on Ingo....

magiceye 😂 - it´s but called "cake", it´s not sweet - like a pizza!

Elizabeth, really?! Modern freezers don´t need defrosting anymore?!!!
We took this from the pre-owners, so... say it´s 20+ years old.
Nothing, no food other than really bad goes to waste here. My parents had to endure war times and hunger, I was raised properly 😉
I have an esky down in my shed, along with a million other things that don't fit inside here. I opened one crate yesterday to see what was inside and found all my baking tins, for cakes and muffins and cookies etc and wished I had a kitchen big enough to do baking in. I do a little bit now and again, but not like I used to. At least I know where the "good" cake tins are now if I want to make a special cake. I made a label and put it on the crate.
I also have the fridge on top, freezer below combo.
Thanks for the onion bread recipe. And I had heard we Americans have giant refrigerators. It must be true. But how nice to manage not to collect so much "stuff" in the frig. And get more fresh food.
